While winter lingers on, there may be some of us who are ready for warmer weather. If you're longing for spring temps, but are looking out the window to find snow, perhaps Great Harvest in Kalispell can provide a little relief with one of our favorite warm soups, with spring vegetables. You'll keep warm, but add the flavors of spring. For now, it's a perfect combination. So on your next trip to the grocery store, gather up these ingredients, get creative and share this soup with someone you love.

On the List:

2 tbsp of olive oil
6 green onions
2 large garlic cloves
1 pound of baby potatoes cut into one inch chunks
1 15 ounce can of diced tomatoes
1 quart of chicken or vegetable stock
Salt to taste
½ pound of artichoke hearts, chopped
1 15 ounce can of chickpeas or fresh chickpeas
1 cup of peas
½ pound asparagus, 1 inch chunks
2 cups greens such as kale or spinach
¼ cup of pesto-homemade or store bought
Grated Parmesan to garnish

Make it Happen:

Slice and chunk vegetables as required
Over medium high heat warm the olive oil
Add white parts of onion and garlic, saute for 1 minute
Add potatoes and stir
Add diced tomatoes with liquid, vegetables and chicken stock
Bring mixture to a simmer, adding salt to taste
Cook over medium low heat for approximately 10 minutes
Add artichoke hearts and cook for 5 minutes more
Add chickpeas and green peas, cook for yet another 5 minutes
Add asparagus, green part of onion and cook for 2 minutes
Turn off heat and stir in the pesto
Top with grated Parmesan cheese and serve

You can make more soup than you need right now, keeping in mind that it makes for some delicious leftovers.
