Fall has arrived, and that means that Halloween is just around the corner. Shock your friends and family by baking some frighteningly tasty pumpkin muffins! This easy recipe from Great Harvest in Kalispell makes 14 of these delicious treats.


- 1 and ¾ cups of flour
- ½ cup of sugar (brown is best if you have it)
- 2 large eggs
- 1 cup of pumpkin puree
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ½ teaspoon of cinnamon and ½ teaspoon pumpkin spice
- ½ cup vegetable oil
- ⅓ cup milk


1. Preheat your oven to 350 degrees F.
2. Spray your muffin pan(s) with non-stick spray or line with 14 muffin cases.
3. Take a large bowl and mix together the dry ingredients. Set this to one side.
4. In another large bowl, whisk together the brown sugar and eggs. 5. Then add all the other wet ingredients and stir until combined.
6. Pour the wet ingredients into the dry ingredients and stir lightly until they are just combined. Be careful not to stir too much or you might harm the consistency of your muffins!
7. Spoon the batter evenly into your 14 cases and bake for 17 - 20 minutes, or until a skewer inserted into the muffins comes out clean.

If you want to mix things up a little more, why not try adding your own extras into the muffins. You could be a little decadent and add chocolate chips or cinnamon frosting or feel free to experiment with additions of your choice!
